Coconut Pumpkin Bread topped with White Chocolate Ganache

This is my absolute favorite Pumpkin Bread recipe!  The way the pumpkin and spices blend with the yummy coconut and white chocolate ganache is absolutely delicious! (a ganache is a mixture of melted chocolate and cream to create a topping that stays somewhat soft but dries just enough to stay in place).   

You get your choice of a full size loaf (a little over 2 pounds), or 8 mini loaves, with or without walnuts and if you prefer, no Ganache topping.

Ingredients: flour, organic pumpkin, organic coconut, brown sugar, granulated sugar, organic eggs, organic butter, organic pumpkin pie spice (cinnamon, cloves, ginger, nutmeg), baking soda, baking powder, organic vanilla extract.  Ganache: Ghirardelli white chocolate, organic heavy cream.  Optional: organic walnuts.
