French Palmiers (also known as Angel Wing Cookies or Elephant Ear Cookies) are a cookie made from a delicate flaky pastry dough. They are simple in taste yet absolutely delicious - and very addictive. These are a little different than the regular sugar and cinnamon sugar French Palmiers. These have your choice of fruit fillings inside. I use fruit preserves to make them a little more unique, and because they are fruit preserves rather than jam, you may get small chunks of the fruit you choice in your cookies. I make the pastry puff dough for these myself, I don't use premade puff dough from the supermarket. Your choice of with cinnamon, chocolate or just sugar (either way they are delicious) .
