Homemade Traditional Irish Scones

Homemade delicious Irish Scones are wonderful to have for breakfast, or as a tea time (or any time) snack.   Relatively similar to English scones, they are simply made with flour, baking powder, butter, eggs, a tiny bit of sugar, salt & cream, and optionally you can add fruit or chocolate chips to make them a a little sweeter.   They are wonderful as they are, or you may wish to slice and add some butter or melted cheese, or jam.     You get various options for these scones - plain, with raisins, golden raisins, dried cranberries, dried blueberries, zante currents (these are a tiny current, similar in flavor to a raisin but have a little kick to them), dried cherries, dates or mini chocolate chips.      You can choose regular size which are roughly 3 inches in diameter and 1 inch thick, or minis which are about an inch in diameter and 1 inch thick. 

These freeze easily, but you must transfer them to a FREEZER SAFE Zip Lock - do not leave them in the packing they are shipped in, and do not use an air tight container - this will ruin the scones - only freezer safe zip locks.  To defrost, simply remove from zip lock and place on counter on a plate or a paper towel for a half hour or so.        Once defrosted, you may wish to gently warm in the microwave, you can wrap lightly in paper towel (this helps moisten the scone) and microwave for 15 to 20 seconds (longer than this may dry the scones out or burn them). 

Ingredients: flour, sugar, organic eggs, organic butter, salt, organic heavy cream, baking powder.  Optional filling ingredients: raisins, dried cranberries, zante currents, Ghirardelli chocolate chips, dried blueberries, dried cherries, golden raisins, chopped dates.
