Island Coconut Chocolate Chip Cookies * Chocolate Chip Cookies with Coconut

As a kid, my dad would occasionally purchase Chocolate Chip Cookies with Coconut added.  Oh My Gosh, they were delicious!   For this recipe, I decided to combine those flavors into a soft and chewy version of Chocolate Chip Cookies with Coconut.  To achieve the wonderful taste, I toast the coconut before adding to the cookies and a little bit of Malibu (Coconut) Rum is added.  If you like, toasted macadamia nuts can be added as well.

Ingredients: flour, sugar, organic eggs, organic butter, salt, baking soda, organic coconut, Malibu Rum, Ghirardelli Semi Sweet Chocolate Chips, optional: organic macadamia nuts
