Italian Rosemary Thumbprint Cookies with Orange or Cherry Filling

Who ever would think the herb Rosemary would be a great cookie ingredient? Usually Rosemary is a wonderful herb for chicken or lamb or other meat dishes. But here we are with these amazingly delicious buttery thumbprint cookies that have chopped rosemary added to them - the flavor is (as my father-in-law often says) OUT OF THIS WORLD. They are so good - you absolutely have to try them! Most often these cookies are filled with Orange Marmalade but I think fresh Cherry Preserves are a fabulous filling for these cookies as well. So you get your choice of orange or cherry filling - or a mixture of both - whatever you like! Quantities are a dozen (12), 2 dozen (24) or 3 dozen (36) cookies. The cookies are lightly dusted with confectioners sugar.

Ingredients: flour, sugar, organic butter, organic eggs, organic vanilla extract, organic rosemary, salt,  fruit preserves.
