I looked high and low - no one makes a sugar free, low carb, Keto friendly version of these wonderful Italian Lemon Cookies. I hunted recipes like crazy and finally had to design one of my own. And in that process found out why no one else makes these, it is not easy making a keto friendly version of Italian Anginetti. Trying to get almond flour to be as light and puffy as non-keto all purpose flour becomes when making Anginetti is very difficult. With some practice and a lot of trial and error, I came up with this wonderful recipe for Keto Anginetti Cookies - these are lemony, light, fluffy - maybe not necessarily as puffy as regular Anginetti, but you got that wonderful flavor of the beloved Anginetti cookies. Made with organic almond flour, organic butter, organic egg whites, organic Monk fruit sweetener, organic lemon and even keto friendly sprinkles can be added!
