By special request I created this Keto Pistachio Shortbread Cookie recipe for someone who loves my regular Pistachio Shortbread Cookies.   These Pistachio Shortbread Cookies have that wonderful pistachio flavor without the sugar and carbs - perfect for anyone following a low carb or keto diet.   The cookies also have chopped pistachios and if you would like, Keto friendly White Chocolate Chips can be added as well.  You can get them topped with Keto Friendly Icing or no icing.
