Finally! Keto Friendly Rainbow Cookies! This recipe has been in the works for a year and a half and after much trial and error, I finally came up with a good one! These cookies have the almond flavor, the cake like texture, not overly sweet, the mild flavor of the raspberry preserves between each layer, covered in dark chocolate, and I even managed to find Keto Chocolate Sprinkles for them! Of course with any Keto alternatives there is some mild differences, but I think these Keto Rainbow Cookies are pretty close to the real thing! Made with mostly Organic Ingredients including almond flour, monk fruit sweetener, eggs, butter, almond extract, Keto Friendly Raspberry Preserves - non-organic ingredients include the Keto Dark Chocolate (Lily's brand, non-gmo), red & green food color, non-gmo Keto Sprinkles & salt. These cookies are also gluten free & diabetic friendly, so you are safe to enjoy!

Please note, because almond flour is moister than regular all purpose flour, it's best to keep these refrigerated.  If you would like to store for later use, cookies can be frozen.   Please be sure to place in a freezer safe zip lock to prevent freezer burn or ice building up on cookies.
