Rainbow Cookies, also known as Seven Layer Cookies, and sometimes Italian Flag Cookies are delicious. They are literally made from an almond flavored sponge cake batter, fruit preserves (almost always either raspberry or apricot), and dark or semi sweet chocolate, layered together and sliced up into bit sized portions. Growing up with homemade, I became quite the fuss pot about Bakery bought Rainbow Cookies - each baker puts his or her own little personal touch on the cookies - and while all were delicious, they weren't the same as the homemade Rainbow Cookies I grew up with - so I had no choice but get my family's recipe and start making them myself.

Would you like a different color combination? Maybe red, white and blue or any other three colors? Let me know when you place your order. The same goes if you would prefer different colored sprinkles on top. No extra charge for the color changes.
